MarginEdge raises $80M co-led by Schooner Capital and Ten Coves to build AI on the $28B of restaurant purchasing it handles

MarginEdge raised $80M in a Series D co-led by Schooner Capital and Ten Coves Capital, taking the restaurant management platform to $162M in total funding since 2015. The company pulls inventory, purchasing, recipes, accounting, sales, and payments into a single system, and says it serves over 13,000 restaurants and has run 40M invoices worth roughly $28B of buying through it. MarginEdge will spend the money building AI on top of that data, including an assistant called Tom the Tomato that recommends orders, points out waste, and explains why a month’s numbers came in the way they did. It also released a restaurant-specific MCP connector, which lets operators open their MarginEdge data to ChatGPT or Claude while keeping control over what those tools can reach.
